Olives

Table olives can be considered as a highly nutritious food rich in fat components of high quality, containing all essential amino acids, lots of minerals, an appreciable content of carotenes (provitamin A), vitamin C and thiamine, and good amount of fiber, providing about 150 calories per 100 grams of food.

Green Olives: Obtained from fruits harvested during the ripening, before veraison, when they reach normal size. Fruit color changes from green to straw yellow. Once collected soften in lime water and preserved in brine.

Black Olives: Obtained from fruits that mature without being totally obscured by oxidation and bitterness has been removed with alkaline solution and must package them in brine. Natural black: the fruits harvested at full maturity or nearly ripe and may present colors of red, brown, purple or greenish black.
